Roasted Tomato Basil Pasta

Roasted Tomato Basil Pasta is a simple and flavorful Italian-inspired dinner made with juicy roasted cherry tomatoes, garlic, fresh basil, and tender pasta. Roasting the tomatoes brings out their natural sweetness and creates a delicious sauce with minimal effort.

- Preheat the oven to 400°F / 200°C.
- Place the halved cherry tomatoes and garlic on a large baking sheet.
- Drizzle with olive oil and add oregano, salt, and black pepper. Toss until evenly coated.
- Roast for 20–25 minutes, until the tomatoes become soft and slightly caramelized.
- Meanwhile, bring a large pot of salted water to a boil.
- Cook the pasta according to the package directions until al dente.
- Before draining, reserve 1/4 cup of the pasta water.
- Transfer the roasted tomatoes and garlic to a large skillet or bowl. Lightly crush some of the tomatoes with a fork.
- Add the balsamic vinegar and stir to combine.
- Add the cooked pasta and toss gently with the roasted tomato mixture.
- Add a little reserved pasta water if needed to loosen the sauce.
- Stir in the fresh basil and Parmesan cheese.
- Let the pasta rest for 5 minutes, then serve with extra basil and Parmesan.
Notes
- For the best flavor, use ripe cherry tomatoes. Do not crush all of them completely—leaving some tomatoes whole gives the pasta a better texture. For a vegan version, simply omit the Parmesan or use a plant-based alternative.
